Eggless Strawberry Cake

I'd been looking for an eggless cake recipe for quite a while. When I came across this recipe, I wasn't too sure about using vinegar as a replacement for eggs in a cake. I doubted that the cake might taste sour, but it doesn't. It tastes wonderful. :) And the strawberry flavor tastes awesome...

Ingredients:
  • 1.75 cups all-purpose flour (maida)
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup oil
  • 14 strawberries, pureed
  • Oil and flour for the baking pans

Method:

  1. Preheat oven to 350 degrees F. ( 180 degrees C ) Grease and flour the baking pan.
  2. In a large bowl, combine all the dry ingredients: flour, sugar and baking soda.
  3. In another vessel comine all the wet ingredients: vegetable oil, strawberry puree and vinegar.
  4. Add the wet ingredients to the dry ingredients and blend with a hand blender till combined well.
  5. Pour the mixture into the baking pan. Lightly drop the pan on the table a few times to get rid of the air bubbles.
  6. Bake for approximately 40 minutes. Remove from oven and cool for 5 minutes.
