I'd been looking for an eggless cake recipe for quite a while. When I came across this recipe, I wasn't too sure about using vinegar as a replacement for eggs in a cake. I doubted that the cake might taste sour, but it doesn't. It tastes wonderful. :) And the strawberry flavor tastes awesome...
Ingredients:
- 1.75 cups all-purpose flour (maida)
- 3/4 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 cup oil
- 14 strawberries, pureed
- Oil and flour for the baking pans
Method:
- Preheat oven to 350 degrees F. ( 180 degrees C ) Grease and flour the baking pan.
- In a large bowl, combine all the dry ingredients: flour, sugar and baking soda.
- In another vessel comine all the wet ingredients: vegetable oil, strawberry puree and vinegar.
- Add the wet ingredients to the dry ingredients and blend with a hand blender till combined well.
- Pour the mixture into the baking pan. Lightly drop the pan on the table a few times to get rid of the air bubbles.
- Bake for approximately 40 minutes. Remove from oven and cool for 5 minutes.
